Recipe Worth Trying:Chocolate Drizzled Strawberries

I decided to make some fancy chocolate-dipped strawberries for my hubby for Valentine’s Day. It really wasn’t too complicated, but it did take a little time. I have to admit I basically made them during the commercials of a couple of half-hour sitcoms I was watching on TV. I usually just dip berries in melted chocolate chips for a special treat. I hope he enjoys them. Happy Valentine’s Day!

White Chocolate Cream Cheese Stuffed Strawberries with Chocolate

1 carton of fresh strawberries

1 tub of Philly White Chocolate cream cheese

½ cup (or more)of chocolate chips-your choice of brand and flavor(semi-sweet, milk, etc)

¼ cup white chips

2 or 3 tsp. of oil

Carefully wash the strawberries and dry them with a paper towel.

I used a small melon-baller to scoop out some space to put the cream cheese in.

Spoon cream cheese filling into each berry

Melt your chocolate chips with a teaspoon or 2 of oil in the microwave. Only heat for 20-30 seconds at a time. Stir before continuing on. It shouldn’t take more than about 2 minutes maximum. Dip stuffed berries into melted chocolate. Place on waxed paper- lined plate/pan and refrigerate after all are dipped.

After about 15 minutes the chocolate should be hardened and you can drizzle with white chocolate (or more brown chocolate) for extra detail.

Melt the white chocolate with 1 tsp. of oil in microwave. Check after every 15 seconds. It can burn/scorch quickly so pay attention ( I tell you this from personal experience ) Poke a small hole in the corner of a baggie and then dump your melted chocolate in. Close it tightly and squeeze it so that the chocolate squirts out from the hole, drizzling over your berries. Refrigerate again until firm.

Enjoy!
